I’ve Never Heard Of A Steak Being Cooked This Way
Ever heard of a sous vide steak? Neither had I, until recently.
Love For Steak
Steak. A good piece of red meat. I love it. The lady with whom I share my life doesn’t eat meat. So, because of that and a variety of reasons I don’t eat nearly the amount of meat I used to eat. Especially red meat.
Don’t get me wrong, I do love it. I just don’t eat it often. Maybe once every couple of months.
So, it was with great anticipation that I looked forward to an invitation I received from a long-time friend that a group of us were invited to gather at his home for a couple of hours of red meat and brown liquor.
A flare went up early in the week when our host sent out a test asking how we wanted our steak cooked. I mean you do get asked that, but usually when they’re being put on the grill, not a few days ahead of time.
Sous Vide Steak
Then, there was a text a day later informing us that the steaks were going to be prepared “sous vide”. OK, I blew right by that in the text. Didn’t care. I was just looking forward to the dinner and the fellowship.
So, we arrived at his home, many of us with gifts of bourbon. So the bar was full of “new” choices. It was then that we learned about how our steaks were being prepared.
Here’s how Webster defines it:
“A method of cooking food, especially meat or fish, by vacuum-sealing and immersing in warm water”. “Gourmet quality meals are ready in a snap using the cooking technology called sous vide.”
OK, they weren’t ready in a “snap”. Here’s a photo of them “cooking”. They were in the water for about two hours, getting to what our host said was the equivalent of having them cooked “medium”. He then removed them and seared them quickly on the grill for the desired consistency.
I have to tell you, my steak was WONDERFUL! It really was good. Everyone at the table enjoyed theirs.
It did seem to me immediately as a great way to prepare steaks for a large group. Put them in the water for a while, then a quick sear on the grill.
The apparatus you see in the photo is the device that keeps the water temperature where you want it. Our host’s grandson, who was in charge of cooking, said he got it at Costco.
When I posted some of this on Facebook I was surprised at the response. I might not have been aware of “sous vide”, but many are! With many of the responders saying that they had wanted to try the method but have, as of yet, not.
If you’ve prepared meals this way, let us know what you think.
